Ingredients
A couple slices of Kombu
1 lb. Very thinly sliced beef sirloin
8 Shiitake Mushrooms
1/2 lb. Enoki Mushrooms
1/2 lb. Shimeji Mushrooms
1/2 lb. Shirataki Noodles
1 lb. Napa Cabbage, chopped
1/2 lb. Watercress
1 lb. Tofu cut in 1 inch cubes, pressed and drained
Anything else you think sounds good like carrots and green onions
A word about ingredients
Kombu is dried seaweed and should be easy to find at your local health food store if your supermarket is lame. If you can't find it, try Nori. (That's sushi wrapping). This stuff is really good for you. It's 9% protein, has tons of B vitamins and minerals and, in folk medicines, is used to treat anything from a sore throat to high blood pressure to tumors. Sounds better already!
Cut your sirloin to no more than 1/16" thick. If you don't have a good knife at home, ask your butcher to slice it.
If you're having trouble finding Shiitaki, Enoki or Shimeji mushrooms, you can substitute white mushrooms, oyster mushrooms, chantrelle mushrooms or white trumpets for all of these.
Shiratiaki Noodles are glass noodles and should be easy to find in the ethnic section of your supermarket. If you can't find them, try substituting angel hair. It's not the same, but will do in a pinch!
