If you've gotten this far without sending your bottle back to the kitchen staff, chances are good that you've got a keeper. But why stop before the fun begins?

    Your tongue can perceive only 4 types of taste: sweet, sour, bitter and salty, so when you take your first swig, make sure to swoosh it around your mouth so that all the elements get a chance to be tasted.
    This is your last chance to check for spoilage.
    Notice the finish, the way the wine lingers on your taste buds. If the aftertaste is short, it's likely that the wine is of lesser quality. A lengthy lingering is one sign of quality.
    Try to taste the texture. Remember when you checked out the legs? Feel that "weight" in your mouth.
    Flex your tongue and try to pick out the flavors you just sniffed: fruity, spicy, floral, nutty, berry, buttery, vanilla.
Honestly, taste is a matter of taste. Yours. Trust yourself and learn what you like.
