Eggs: All They're Cracked Up To Be
by Leigh Serling

No Yolk | Hard | You Little Devil | Omelets

The Perfect Hard Boiled Egg
If you can boil water, you can hard-boil an egg.

What You'll Need:
    Eggs
    Medium size saucepan
    Water
  1. Put your eggs in the saucepan, and add enough water to cover about an inch above the eggs.
  2. Turn your stove to a medium flame and place the pot on the burner. Bring the water to a bubbling boil, then immediately turn the flame down to a low simmer.
  3. Let your eggs simmer for about 8 to 10 minutes, keeping an eye on the clock as you don't want to over cook them or they will be rubbery and hard.
  4. Once they've simmered, remove the pot from the hot burner, and let the eggs stand in the same water for a few minutes. If you forget, and leave them in the water for hours, don't worry about it because the water will cool off.
  5. Before you store them in your refrigerator, run each egg under cold water for a few seconds. This helps the shell peel off easily.
Bright idea: Before purchasing your eggs, make sure to open the carton and check for cracked or broken eggs. Sometimes they can be cracked at the bottom and you may not notice until you get home and the eggs sticks to the carton.
