Pecan Pumpkin Pie
Don’t be put off by the “piecrust,” which is really just
yellow cake mix mixed with pecans. Generic yellow cake mix is fine, but
if you have a few extra pennies, splurge on a fancy mix with pudding.
What you'll need:
1 29-ounce can pumpkin pie mix
1 5-ounce can evaporated milk
2 eggs, lightly beaten
1 cup sugar
½ teaspoon salt
2 teaspoons cinnamon
1 box yellow cake mix
½ pound butter, melted and cooled
1½ cup chopped pecans
- Preheat the oven to 350º.
- Line two 9” pie pans with
waxed paper.
- Mix together the pumpkin pie mix, milk, sugar, eggs,
salt and cinnamon, and pour mixture into the pans.
- Sprinkle cake
mix over the top, and distribute chopped pecans evenly over the cake
mix.
- Drizzle the melted butter over the pecans and cake mix.
- Bake
for on1 hour.
- Chill. Makes 2 pies, 6 slices each.
