Pecan Pumpkin Pie
Don’t be put off by the “piecrust,” which is really just yellow cake mix mixed with pecans. Generic yellow cake mix is fine, but if you have a few extra pennies, splurge on a fancy mix with pudding.

What you'll need:

    1 29-ounce can pumpkin pie mix
    1 5-ounce can evaporated milk
    2 eggs, lightly beaten
    1 cup sugar
    ½ teaspoon salt
    2 teaspoons cinnamon
    1 box yellow cake mix
    ½ pound butter, melted and cooled
    1½ cup chopped pecans
  1. Preheat the oven to 350º.
  2. Line two 9” pie pans with waxed paper.
  3. Mix together the pumpkin pie mix, milk, sugar, eggs, salt and cinnamon, and pour mixture into the pans.
  4. Sprinkle cake mix over the top, and distribute chopped pecans evenly over the cake mix.
  5. Drizzle the melted butter over the pecans and cake mix.
  6. Bake for on1 hour.
  7. Chill. Makes 2 pies, 6 slices each.
