Caramel Sauce
1 cup butter
2 cups light brown sugar, packed
1 cup heavy cream
- Cut butter into pieces and melt it in a small, heavy-bottomed pan
or double boiler.
- Stir in the brown sugar and cream.
- Cook over very low heat, stirring
constantly, until all ingredients are blended.
- Serve warm. Makes
2 cups.
Whipped Cream
2 cups heavy whipping cream
2 tablespoons powdered sugar
1½ teaspoon vanilla
- Whip cream in a medium bowl, gradually adding sugar and vanilla.
- Whip into soft peaks, and refrigerate. Makes 2 cups.
To Serve
After the pie and whipped cream are nicely chilled, remove
both from the refrigerator. Invert each pie onto a serving
platter,
and cut into
wedges.
Place wedges onto plates, drizzle with warm Caramel Sauce and
top with whipped cream.
If You Are Really Lazy
Yes, you can substitute Cool Whip for homemade whipped cream,
but you really, really don’t want to skimp on the Caramel
Sauce, which is possibly the best part of this dish. |
