Thai Style Turkey With Noodles

What you'll need:

    1 lb linguine or spaghetti pasta
    3 garlic cloves, finely chopped (you can buy jars of pre-chopped garlic)
    1 teaspoon minced peeled ginger (you can buy jars of pre-chopped ginger)
    1/2 teaspoon dried hot red pepper flakes
    2 teaspoons vegetable oil
    3/4 cup chicken broth or water
    2/3 cup smooth peanut butter
    2 tablespoons soy sauce
    2 teaspoons sugar
    2 tablespoons fresh lemon juice
    4 cups cooked turkey, shredded
    4 celery ribs, thinly sliced
    1 cup thinly sliced scallion greens
  1. Cook noodles in boiling salted water until tender, about 12 minutes.
  2. Save 1 cup cooking water and rinse noodles in a colander under cold water to stop the cooking process.
  3. Drain well.
  4. Cook garlic and red pepper flakes in oil in a small saucepan over medium heat, stirring, until garlic is lightly golden (careful as garlic burns fast).
  5. Whisk in broth, peanut butter, soy sauce, sugar, and ginger and simmer, stirring gently for 2 minutes.
  6. Remove from heat and whisk in lemon juice.
  7. Toss together turkey, celery, scallions, noodles, sauce, and some of the reserved cooking water if you need to thin the peanut sauce.
  8. Serve immediately.
