Not Your Mama's Flapjacks

There are two ways you can mix up the batter:

Mixer method:

  1. Combine the eggs and salt in a large mixing bowl and blend on low speed.
  2. Gradually add the flour in small batches, alternating with the milk. Blend completely after each addition.
  3. When all the milk and flour have been incorporated, beat in the melted butter.
  4. Refrigerate the batter for at least one hour.

Blender method:

  1. Combine all ingredients in the blender and blend for one minute.
  2. Scrape down the sides of the blender.
  3. Blend for another 15 seconds.
  4. Refrigerate the batter for at least one hour.
