What you'll need:
Non-stick flat skillet
Large mixing bowl
Electric beaters or wooden spoon
Spatula
Paper Towels
1/4 cup Vegetable oil
1 1/4 cup of flour
3 egg whites
1/3 cup of sugar
3 tablespoons of melted butter
1 teaspoon Vanilla Extract
1/2 teaspoon Almond Extract
3/4 cup of warm water (substitute mild to medium strength tea for added flavor)
40 to 50 home made fortunes: 3" - 4" x 1/4"
Mix it up
In a large bowl mix all of the ingredients together, minus half of the water. If you have an electric mixer, mix on a low speed. If not, stir by hand until all of the ingredients blend together into a semi-moldable dough that is thicker than pancake batter, but softer than pizza dough. You can add some of the water you saved if the mixture is too dry, or even add a little extra if you need to. Let stand 10 minutes.
Let's Cook
Lightly coat the bottom of your pan with vegetable oil and heat under a medium flame.
When the oil is heated, drop one tablespoon of batter into the center of the pan.
Using the back of a spoon, spread the dollop into a flat circle, 3"- 4" wide.
Cook 3 to 3 1/2 minutes on each side, or until the cookie's edges have slightly browned.
Once you have cooked both sides, remove the cookie from the pan and place it on a paper towel to absorb any excess oil.
The Race is On
Now, you have to work quickly, because the cookie can only be shaped when it is warm. It may take a little practice, but have faith - you can do it!
Begin by placing one homemade fortune in the center of your warm circular cookie.
Fold the circle in half and hold with straight edge shooting directly out from your belly button, curved edge to the right.
With your right hand, lightly hold in the center of the curve.
With your left hand, place your thumb and middle finger on the corners of the straight edge poking the center with your pointer finger as you pinch them together.
Let them cool and Voila!
