Take Comfort: A Quick Guide to Comfort Food

Banana bread pudding
This time-honored recipe is a great way to use up stale bread and over-ripe bananas. It makes splendid leftovers, too, so it can be dessert one night and breakfast the next morning.

What you'll need:

Butter
5 to 6 cups of bread cubes
1 quart milk (lowfat or whole)
3 eggs, slightly beaten
1/2 cup brown sugar, packed
2-3 ripe bananas, mashed
1/4 teaspoon salt
1 teaspoon vanilla
1/2 teaspoon cinnamon
2-quart baking dish

  1. Preheat the oven to 325 degrees.
  2. Butter the baking dish and fill the dish with the bread cubes.
  3. Blend the milk, eggs, brown sugar, bananas, salt, vanilla, and cinnamon thoroughly.
  4. Pour the milk mixture over the bread cubes and let them soak for about 30 minutes.
  5. Bake covered for 40 minutes; uncover and continue baking for another 40 minutes.

Now that your comfort food feast is complete, tuck yourself in for a cozy night of soothing treats.
