Banana bread pudding
This time-honored recipe is a great way to use up stale bread and over-ripe
bananas. It makes splendid leftovers, too, so it can be dessert one
night and breakfast the next morning.
What you'll need:
Butter
5 to 6 cups of bread cubes
1 quart milk (lowfat or whole)
3 eggs, slightly beaten
1/2 cup brown sugar, packed
2-3 ripe bananas, mashed
1/4 teaspoon salt
1 teaspoon vanilla
1/2 teaspoon cinnamon
2-quart baking dish
- Preheat the oven to 325 degrees.
- Butter the baking dish and fill the dish with the bread cubes.
- Blend the milk, eggs, brown sugar, bananas, salt, vanilla, and
cinnamon thoroughly.
- Pour the milk mixture over the bread cubes and let them soak
for about 30 minutes.
- Bake covered for 40 minutes; uncover and continue baking
for another 40 minutes.
