Rather than place
each wine near a specific cheese, keep all wines together and all cheeses
together, advises Maureen. This will encourage partygoers to experiment
and discover their favorite combinations. Keep a water pitcher nearby
for rinsing glasses between pours, as well as a spit bucket. Despite
its unappealing name, a spit bucket is simply another pitcher or ice
bucket for guests to dispose of unwanted wine. Make sure the spit bucket
is opaque; otherwise, the mix of wines will start to look gross and could
turn a few guests' stomachs.
And, most importantly, add your own touches. Get crafty and make name
cards for each cheese and wine, or use colored ribbons to create wine
markers for each guest. A festive atmosphere paired with good wine will
make guests excited to learn.
