Banana Chocolate Chip Cookies

What you'll need:
1 ½ C flour
¼ tsp baking soda
¼ tsp salt
¾ C unsalted butter
2/3 C sugar
1/3 C light brown sugar
1 large egg
2 tsp vanilla
½ C mashed very ripe banana
1 C rolled oats
1 C chocolate morsels
- Preheat oven to 350 degrees.
- In a medium bowl combine flour, baking soda, and salt; set aside.
- In large bowl, use an electric mixer to beat together butter, sugar, and brown sugar until well-blended. Add banana, egg and vanilla and beat until throughly incorporated. Stir in oats and chocolate.
- Scoop and drop the dough onto greased baking sheets in scant golf-ball-sized mounds, spacing about 2 ½ in. apart.
- Bake cookies one sheet at a time in the upper third of the oven for 10 to 14 minutes, or until lightly tinged with brown all over. Be sure to reverse sheet halfway through baking to ensure even baking.
- Let cool on wire rack.
